It just sort of happened, and after a good amount of time i just said 'fuck it, i'll keep going'. Now once in a while i'll pick of a couple of bottles of something that i can age, drink one and age the other. Not that often though, since there are only certain styles that are any good to age anyways.
I keep hearing conflicting things about the aging process with certain beers. Some say it brings out more flavour, some say it shouldn't be done. What are the pros to doing it? Bottle maturation? etc.? I basically know as much as you. I believe the pros and cons will be mostly personal preference, especially with some beers like the coffee and chocolate flavoured ones. Those flavours apparently become a little more subdued, and less up front, which is something I'm interested in, as while i like them fresh, sometimes i think I'd like it a little better if they sweet chocolate or coffee flavours weren't so powerful. As for Barley Wines and Russian Imperial Stouts, apparently they can just become much better with age, as well as Trappist beer and Belgian strongs. But it still seems to be a lot of personal preference. I may try some beer i've aged (like the Choklat) and prefer it fresh. Won't know til i try. So i'm trying As i always say, i don't pretend to be a know it all, because i don't really know a lot about beer for the most part. I just know what i like, and now what other people may like, as a whole. The fine detailed knowledge will come with time...and effort in research. As this article says... aging/cellaring is still in it's infancy. http://www.theglobeandmail.com/life/foo ... le4179635/I hear ya dude, the only thing I've heard is the difference between laying the bottle down as opposed to it standing up. Apparently laying it down can cause a metallic taste from the cap. Not sure if that's true though, but something to consider. I also found out recently that by drinking beer out of a metal can you are introducing aluminum to your blood stream and it increases your chance of memory loss. Having that in mind, I think I'm vowing to pitch cans to the curb from now on.

I didn't get to try the Choklat or Javah that they're based on, but I can only assume that godly is the word used for describing those. Mokah was great, as just like all the other ST brews, this was exactly as it was described. It was a little bit boozy (at 11.2% how could it not be), but it was balanced out well. I loved it. Any opinions on this? I'm officially all confused as to the Café ST I've had. Oh well. Cafe? My bad. I knew I'd get asked about that lazy post. I was confused as to which Blackwater Series drinks I've had of theirs now, lol. Java and another. Just not sure whether it's Chokolat or Mokah.

Haven't had it yet but SHAWING! No way that's gonna be a bad brew. Love me imperial stouts. This is going to sound lame, but I really like the sleek feeling of the head to the bottle. It has a really nice casing closing the neck with the cap. It's all wax. So when you pop the cap you are popping the cap through the wax. That's a first with me and a beer.

Blasphomet...
when you had the belgian mix pack.
Was it the mix pack with two bottles of each flavor or was it the mix pack with 6 different flavors?

Tasted one of my homebrew beers from my 2nd batch and it has great carbonation but it still needs to age a bit, very young beer still. Maybe another week or so.

Was it the mix pack with two bottles of each flavor or was it the mix pack with 6 different flavors? I think it was two of each flavour. Two of the bottles were white. The Amsterdam Tempest. Did you pick that up at the LCBO? I don't see it on the site. I'm really liking what they've been releasing lately. Brewery is becoming very good, and i hate their blonde.

Went to the beer store today and returned all my empties. Ended up getting a 12 of Newcastle Brown in bottles and a wicked bottle opener by BBbarfly.

Yah, I snagged it at an lcbo. Didn't have ap rice tag yet, but you'd be happy to know it was less than $6. On another note, your response to the question I asked. Does that mean that you haven't had their other godly mix pack with Gulden Draak and Piraat inside?

Yea man, mine is a white opener with a Skull and a snake design on it. Saw it at the last second when I was buying a different one, a blue opener with skulls on it. I went to grab this pack the other day and it was completely sold out, the other pack was there but I was so bummed out I didn't get that one.

I wasn't a big fan of them at first. Then I found out they are considered world class top 5 best beers in the world. I've tried them several times since. They are an acquired taste. I've grown to like them. Probably not as much as the Belgian's though. Plus, they are supposed to be chilled and then brought to room temperature in a glass. I neglected to do that the first couple of times. After doing that, it really became another beer entirely. I'm not selling this beer to you, I just thought I'd throw that info out there because who knows how you served yourself in the past and who knows how long ago.

Re: NOW DRINKING - BEER SNOBBERY VOL. 4
Tips and Tricks:
Hi everyone,
I just finished enjoying the wonderful Amsterdam Brewery - Tempest Imperial Stout. I was trying to figure out why they put a coating of melted wax on the neck/cap of the beer. I read the back of the bottle and it says "This beer will cellar well for up to 3 years." So, that being said. I really believe that they put the wax on the neck/cap of the beer to help with the aging process. Nothing goes in, nothing comes out.
It was a great imperial stout, but nothing special which separates itself from the standard imperial stouts out there.
Blasphomet, I think it may be wise for you to dip your aging bottles of beer in melted wax. May just give them that extra seal of perfection to help with the process.

I have aged mead (both carbonated and still) for up to 5 years in bottles with regular beer caps and never had an issue. I think that the wax is mainly just for looks. I mean, if the seal were bad on a regular cap when you opened your beer up it wouldn’t be carbonated anymore. I have never had this issue, and I would guess that the wax is probably a relic of times when capping wasn’t quite as efficient. It does look kind of neat though.
