Made an AWESOME onion soup last night. Topped it with grilled sourdough, 3 year aged Irish cheddar and fresh sage. Threw it under the broiler until melted and totally trucks.

Did you use Jamie Oliver's recipe? Because his English Onion Soup uses sage and sharp cheddar. And it rules. Easily his best recipe.

He once made this bread soup that involved layering grilled bread with veg (cabbage I think), and cheeses like a lasagna, then pouring some stock over it and roasting the whole thing in the oven until all bubbly and awesome. Incredible, and one of my favorite things to make EVER now (except I use kale instead of cabbage).

I agree. Too many TV chefs would rather be celebrities with recipes that include some ingredients that you could only find in New York, or Hong Kong. While fun to look at in a cookbook they mean nothing to my everyday. I'll always appreciate Oliver and Michael Smith for keeping it real.

I dislike Michael Smith too.
I mean, I'm a huge believer in keeping things simple and letting the ingredients speak for themselves, but I just find the personalities of those two particularly grating. Not nearly as grating as that Nadia G chick though, and at least they have demonstrable, legitimate perspectives and techniques.

The only thing about Chuck Hughes that I dislike is his disturbing hair. It looks like a scary toupee from the 80s. I like that he's been getting pudgy though.

 Jamie Oliver and Michael Smith are probably my two favourite tv chefs. As KRP said, their recipes are simple, no-nonsense, and highly adaptable. I like their laid back approach and they are very good at explaining things.

I find it amusing when restaurants/retailers/people include the term "wild mushroom" as a descriptor for dishes that just have regular ol' farmed mushroom varieties.
I got a soup from my work's cafeteria just now - "Wild Mushroom Barley" - consisting of nothing but the ever so rare and uneasily cultivated 'white button mushroom'.

It was my mom's birthday on Saturday, and my grandma cooked a spaghetti dinner for the family. There was a lotof sauce left, so she sent some home with us and we had leftovers last night. I have to say, my grandma always makes one hell of an awesome spaghetti sauce. I definitely need to learn the recipe.
